Ridgewood NJ, From Scratch in Ridgewood is joining other Italian restaurants around the country in raising funds for Italy’s earthquake victims by offering the signature dish of the stricken region, pasta all’Amatriciana. Owner Claudia Rovegno will cook the dish, made with pancetta and pecorino cheese, on Thursdays, Fridays and Saturdays through the end of September.
