I’ll admit it, I’m a sucker for spaghetti and meatballs. But this dish from executive chef Adam Weiss makes the classic even more deeply satisfying with a stick-to-your-ribs sauce flavored with wood-grilled pork, moist meatballs and luscious fresh ricotta ($25).

* A no-brainer: This is hardly chef/owner Christine Nunn’s first Picnic restaurant. Her first, which opened in Emerson in 2004, primarily as a catering firm, was “successful — people loved the food — but not financially successful,” Nunn said. It closed in 2010. On New Year’s Eve 2012 Nunn launched Picnic, the Restaurant, in Fair Lawn, which diners and critics loved as well – the restaurant received rave reviews, including three out of four stars from The Record — but it too closed, in January 2013. Then Alex Parlamis of Axia Taverna made an offer Nunn could not refuse. “I was lucky enough to have someone ask me if I want to start another Picnic,” she said. Picnic on the Square opened last month.

* The difference: There isn’t much difference between the last Picnic and this Picnic, Nunn said: “It’s the same Riedel wineglasses, same fish forks and knives.” She concedes the 32-seat Picnic on the Square is a bit less formal, “a little less stuffy-looking,” sporting brick walls and huge windows.

No Ridgewood restaurant screams luxury like the six-month-old Roots Steakhouse.

First, a valet parked my car, a relief on a busy Saturday night. A hostess escorted me into the clubby dining room, which featured dark wood paneling, a stunning engraved ceiling and charming prints of vintage fashions. All around me, well-dressed customers dined on gleaming seafood platters, brawny steaks and towering desserts.

And once my meal began, it was clear that Roots has much to offer, including some excellent red meat and a first-class crabcake. But while Roots has some steaks that are prime and some steaks that are dry-aged, it offers none that are both, which may turn off many steak purists.

Of all the salads, the kale salad is most virtuous. You choose it with a certain smugness; it’s a healthier-than-thou selection.And then a chef sneaks in a bit of hazelnut and almond in the vinaigrette dressing, and your kale salad is suddenly perky and flirty and coy, sparking unexpected interest from the manly man meat-eater at the table. Then, boom, before you know it, the kale salad is gone, consumed like so many crisp, fresh French fries. Kale. Who knew?

The kale salad ($12), with avocado, blood orange slices and feta, is just one of the unexpected surprises at Café 37. It’s also, not surprisingly, the most popular salad on the menu.

Ridgewood has long been a town with good dining options, but in recent years, the scene has become even more competitive and dynamic. Café 37, which opened in 2012, remains one of the reasons.

The bread is from Balthazar, the chicken is from Goffle Road Poultry Farm in Wyckoff and the most popular topper is a fried egg.

Le Bon Choix is an homage, really, to the chicken, and it represents another unique restaurant addition to the village of Ridgewood, which is rapidly laying claim as one of New Jersey’s most distinctive foodie destinations.

On the menu? Rotisserie chicken, served with corn bread and sides (including butternut squash, potato au gratin, mac and cheese, and collard greens). Plus chicken sandwiches, such as the Lyon, which is chicken topped with white bean purée and
field greens, or the Cote du Rhone, which is rotisserie chicken in an espresso barbecue sauce, with Gruyère and coleslaw.

Or skip the chicken for the gussied-up grilled cheese, with Gruyère, Parmesan and goat cheese. And yes, a burger graces the menu.

It’s a French-inspired restaurant with Southern influences, says owner Ahmed Soliman.

The restaurant’s popularity (expect a line for weekend brunch) rests on its philosophy: Start with great ingredients, keep it simple. That, plus a casual atmosphere and the rooster cookies that are popular with the kids and on Instagram.

Le Bon Choix is also a gluten-free haven, says Soliman, who offers gluten-free bread for sandwiches, gluten-free French toast for brunch and a few homemade gluten-free options for dessert.

It took Soliman two years to secure a space in Ridgewood — it’s tough to get in, but it’s a terrific location for a restaurant.

Michael Latour, 51, was no stranger to high-end cooking even before he opened Latour in Ridgewood in 1998 — the Ramsey resident had cooked at the Jockey Club at the Ritz Carlton, the Four Seasons Hotel, the Doral Park Avenue Hotel (all in New York City) and L’Auberge de France in Wayne before opening his own place. Latour, a French-American restaurant, received three out of four stars from The Record in 2010, when it was last reviewed.

Although he has a degree in culinary arts from Johnson and Wales University in Rhode Island, Latour says it was his on-the-job experience that was most valuable — in cooking, he says, everything is based on interpretation, and learning from others is critical to create one’s own style.

Here, Latour talks about convection ovens, his (negative) feelings for tilapia and his favorite local restaurant.

Plants Can Tell When They’re Being Eaten

Eating a leaf off a plant may not kill it, but that doesn’t mean the plant likes it. The newest study to examine the intelligence (or at least behavior) of plants finds that plants can tell when they’re being eaten — and send out defenses to stop it from happening.

We’ve been hearing for decades about the complex intelligence of plants; last year’s excellent New Yorker piece is a good place to start, if you want to learn more about the subject. But a new study, conducted by researchers at the University of Missouri, managed to figure out one new important element: plants can tell when they’re being eaten, and they don’t like it.

The word “intelligence,” when applied to any non-human animal or plant, is imprecise and sort of meaningless; research done to determine “intelligence” mostly just aims to learn how similar the inner workings of another organism is to a human thought process. There’s certainly nothing evolutionarily important about these sorts of intelligence studies; a chimp is not superior to a chicken just because chimps can use tools the same way humans do. But these studies are fascinating, and do give us insight into how other organisms think and behave, whatever “think” might mean.

This particular study was on the ever-popular Arabidopsis, specifically the thale cress, easily the most popular plant for experimentation. It’s in the brassica family, closely related to broccoli, kale, mustard greens, and cabbage, though unlike most of its cousins it isn’t very good to eat. This particular plant is so common for experiments because it was the first plant to have its genome sequenced, so scientists understand its inner workings better than almost any other plant.

The menu: mostly pizza. The setting: tiny. The phone: often ignored. The wait for a table: sometimes an hour.

And no wonder: Ridgewood newcomer S. Egidio is a local novelty, an Italian restaurant run by a newly arrived Italian chef with food that is both authentic and creative.

Its menu is simple: Italian cured meat, imported cheeses, salads, a few appetizers, and Neapolitan pizzas that are blasted for a minute in a 1,000-degree oven until blistered and bubbling. Occasionally, there are pasta specials; sandwiches are served at lunch.

Distinguished scholar, microbiologist and Rutgers University professor Dr. Don Schaffner would like to impart some personal wisdom upon the general public in an effort to educate those who might benefit from his insight: He eats his peanut butter at room temperature only.

“I personally just don’t like cold peanut butter, so I keep it out of the refrigerator,” Schaffner said. And he’s not just talking Skippy, or Jif. He means natural peanut butter, without any preservatives. While other food safety experts, in an abundance of caution, might say he’s living dangerously, you know what, says the renowned food scientist and unabashed peanut butter lover? It ain’t gonna kill ya.

“In my house, it doesn’t stay around for more than a couple of weeks. And I have never experienced it going rancid, within that time frame. If you expect to keep it around for a month or more, if you eat peanut butter that slowly in your house, then maybe you should think about putting it in the refrigerator. But within a couple of weeks, I’ve never had a problem.”

The Ridgewood rodizio restaurant The Stable held its last dinner service last night, says owner Marcello Czernier. He is now remodeling it to become a small-plates restaurant called Finca (“estate” in Spanish). Czernier says it will generally have a different menu than his other Ridgewood restaurant, Cravings Tapas Bistro, though some dishes may be available at both spots. He hopes to open in about six weeks.

Amelie Wilday was coming home “weepy, cranky, tired and hungry,” according to her mother, Gaby. It was two years ago, halfway through the first month of first grade, and something was not right with the Ridgewood 6-year-old. Gaby Wilday, who had ordered Amelie’s lunch through the school’s food provider, asked her daughter to bring home what she wasn’t eating.”That’s when I noticed she just wasn’t eating,” said Wilday. Amelie didn’t like the food, and her mother didn’t like the quality. She also noticed the Wildays must not have been alone, as there were many lunches from outside food vendors being dropped off at Ridgewood schools.Already with a commercial kitchen for a sauce business, she decided to see if she could create a better school lunch model. She started with seven lunches, which she gave to a group of families for free in return for feedback. She ended up hearing from many more than those seven.

“By November 1st, I was getting emails from principals, PTO presidents, parents from other schools,” she said.
